top secret corn bread

Here is my top secret cornbread recipe.  I will give it to you, if you promise not to give away my secrets, okay?  Secret number 1 it costs about a buck to make enough for dinner.  secret #2 it only uses 5 ingredients secret #3 I use Jiffy mix.

 So you can keep those secrets, right?  okay then here goes.

 

You will need

2 eggs

3/4 cup milk

1 cup corn kernels ( I use frozen, you could probably use canned or fresh if you prefer)

1 box Jiffy corn muffin mix

1 box Jiffy yellow cake mix

 

then this is what you will do.

Preheat the oven to 350 degrees.  Put both boxes of Jiffy, 2 eggs, and the milk in a bowl and whisk thoroughly, till there are barely any lumps.  Then stir in the corn kernels.  Next grab your cast iron skillet (I think I use a 10 inch, but it might be an 8 inch) and grease well (I spray mine with Pam for Baking).  Bake for 30 minutes.  Remove when firm.  To serve, run a knife around the edge of the pan, turn out onto a plate, and then cut into 8 pieces.

  1. I used to make my cornbread homemade, and my husband loved it. I messed up and used Jiffy once. Now, he doesn’t want it any other way! We love Jiffy. Your recipe looks great!

  2. Sorry, I know Jiffy and I know Southern Corn Bread. They are not the same. LOL. I don’t like sweet corn bread. It just doesn’t taste right. Homemade is the cheapest way to go. Our eggs are so yellow they turn the corn bread yellow even though I use white corn meal. We like to add jalepena slices, cream cheese chunks, black olives. All kinds of ways to switch it up.

  4. GOOD idea to mix the two! If you have a Trader Joe’s, their box mix is unbelievable. Real corn kernals…

  7. I haven’t been lucky enough to have a trader Joes since 2003! And I do miss them! Especially their chinese chicken salad.

  8. Ohhh, I had to dig through your archives to find this, because I got ridiculously excited in the store the other day when I finally found the jiffy cake mix. I can finally make this recipe. Woohoo!
