Spice bread

This is very good and filling.  We eat it for breakfast, snacks, and late night munchies.  Navi and Princess have both requested it for their snack days and Princesses teacher even requested it to make at school as a class!  It is super easy to make.

Preheat oven to 350 degrees.

Mix together:

1 lb. pureed pumpkin

1/2 cup oil

1 1/2 cup white sugar

1 1/2 cup brown sugar

2 eggs

1/2 tsp. salt

1/4 tsp ground cloves

1/2 tsp. ground nutmeg

2 tsp ground cinnamon

When thoroughly mixed add in

2 tsp baking powder

3 cups AP flour

Mix till just blended and pour into an oiled loaf pan.  Bake for about 1 1/2 hours (until a knife inserted in the center comes out clean, I usually start checking after 50 minutes).

  1. About how many cups is a pound of pumpkin? I just froze a bunch of pumpkin in 3 cup bags.
