How cold I forget to post the Latka recipe for Chanuka???
Well here it is, simple and yummy, homemade from scratch and gluten free to boot!
Start by peeling and shreding 3 potatoes. Sprinkle liberally about 1 tbsp salt – (kosher preferred) toss to mix in salt and set aside for 15 – 30 minutes. squeeze excess liquid out of potatoes and discard the liquid, mix in 1 raw egg and 1 cup mashed potatoes. In a skillet heat 1 inch olive oil ( I use cast iron) and CAREFULLY drop small handfuls of potato mixture in, and smoosh with spatula. when edges begin to brown flip carefully. when browned on second side remove from pan. this recipe makes 9 latkes. you can make ahead and reheat in a 350 degree oven for 15 – 20 minutes. top with sour cream or gravy (or applesauce if you must) enjoy!
